I personally believe that cheese is a fun food to eat. There are so many different ways to enjoy cheese...it simply goes with anything. For example I have become a fan of 'cheese curry' recently. It's a quite simple dish that can be prepared in minutes. Imagine a curry. Imagine grated mature cheddar instead of a bed of rice. Imagine lashings of HP Brown sauce instead of the curry sauce and imagine a few thick slices of Hovis instead of a naan bread. Instant cheese action. YOU BEAUTY!!! I've tried to think of what could be used in place of the meat in the curry but so far I have drawn a blank. Maybe a few selected cubes of cheese (of a different colour and flavour) would do the trick. It's up to you. Another fun way to eat cheese is in a game called 'cheddar roulette'. Based on the deadly game of russian roulette simply replace a loaded gun for a plate of cheese. You need 6 cubes of cheese. 5 cubes are simply economy cheddar with a very low strength. One of the cubes is an extra mature super strong vintage cheddar. Play a series of questions and the first to get the extra mature wins. Last but not least, this is not for the faint hearted (literally as this babe has enough fat to kill) is the cheese sandwich deluxe. What's special about that I hear you ask? Well try this. NO BREAD! Cut two thick trianular slices of cheese. Any flavour will do but not too strong. Make sure you use a rubbery cheese and not a crumbly variety as this will be the 'bread' of the sandwich. Then fill with grated cheese and lashings of creamy butter. A solid cheese sandwich.

Life in the kitchen getting drab? peter howarth looks at ways to spice up your cheese life.

As impossible as it sounds sometimes you just get tired of plain old cheese on toast. Oh no! i hear you cry. imagine the scene. your wife pops home after a stressful day at work only to storm up to bed with a cry of "not cheese on toast again!" the sulk could last for days but fortunately help is at hand from our friends across the pond in switzerland. they came up with the idea of fondu, and what a wonderful idea it is. it basically consists of a heated pot of melted cheese with little pronged forks that you use to dip lightly toasted bread into the cheese! its great fun especially when the excitement builds as to wether your bread has slipped of the fork and sank to bottom of lake cheddar. if you are feeling a little more frisky try new boiled potatoes instead of bread for the extra glint of taste. so next time your lover is feeling blue light some candles and start dunking. anyone who loses the bread in the cheese has a forfit to do. this adds an extra bit of fun to teatime! petes tip: try combinations of mature cheddar and red leicester for a fruity zest!

Welcome to "Extra Mature"... the informed and opinionated section on all things cheesy...and beyond! This month I have been enjoying chedder, although i have yet to discover a really mature chedder cheese. I advise to browse further afield than your local spar and check out some local farms. If thats not possible dont fear... i am researching current market trends into mail order cheese. More next time.
